It's surprising how resilient the nitrite munchers are. I've known them be dry for 6 months, yet still be able to process some (not all) straight away.
It looks like you've added enough for 1ppm, does it say to aim for 2ppm?
If at first you don't succeed....
...get someone else to do it! :D

Enjoy your fish, shrimps and snails!

It's just says 4 drops per gallon on the bottle bit I read a few people had it measuring off the charts for amonia after that and to add 1 per gallon, so thought I better do that first and see how it goes but I believe I probably want about 3ppm to start things off?

Will see how things are when I get home tonight as looks like I might already have some bacteria in there working already.

Tested again and looks like amonia down to 0.25-0.5ppm , nitrate very low still maybe 0.25 and nitrate 10-20ppm (honestly can't tell the difference with this kit)

So not really sure what's going on or what to do next of anyone can help

Looks like you have some live munchers in the media then. That's lucky! :D
Top it up to 2ppm if you can.

Seems like it but not sure how well they are working, no change from yesterday but dosed it up to 2ppm now and will see how it goes.

Difficult to tell on the brown (it's best to put it on a white sheet of paper ;) ), but looks like around 1ppm ammonia, 0.25 nitrite, 20ppm nitrate.

Yeah the pictures make it all look slightly different as well.

Should I be changing the water at all the reduce the nitrates or does it not matter while there is no fish?

No need to while your cycling with no fish. You might need to do a change if the ph drops too low but otherwise you do a large water change at the end of the cycle before you get fish to reduce nitrates and refresh the water ready :)

Yes, nitrates while you're cycling may not be very good readings anyway as the test can be affected by ammonia and nitrite. Wait until the cycle is over.
They can help you to tell whereabouts you are in the cycle though. ;)
