Would cherry shrimp be suitable? Do you think my fish would eat them

Generally, if it fits in a fishes mouth, it could be eaten.

Hmm, none of the fish are very big. Worth a try or not?

If you get them at a decent size, they might be ok. However, when you first introduce the shrimp they like to zoom around the tank, which might then trigger your tetras and platties to give chase and have a nibble. Perhaps drop in a large clump of moss or floating plants for a few days, at least, to give the shrimp somewhere to escape to.
Once settled you can slowly start to thin out any excess plants.

I am one cardinal down, can’t find him anywhere, although my guess is he’s been eaten since they always seem to be beating each other up. :(

The gourami and platies would eat carcasses, The other cardinals might help with the clear up.
I'd suspect the gourami is more likely to have been the murder culprit though, unless it's found a really good hiding place.....

Most live bearing fish will loose a lot of fry if it's their first time at giving birth, if you want to keep the fry alive you could buy a breeding pen, what size is your tank?

Possibly, although it’s the cardinals that I see nipping and chasing each other, another of them lost an eye a few weeks ago.
