This hobby teaches patience, especially with cycling. ;) :)
It's all worth it as the fish will be healthier (unless you get poor ones from the shop, which happens) and if there are problems they will be easier to deal with.

The flow is probably not getting around the whole tank, top to bottom, that's a main cause of it. What Martin has posted is a good idea if the filter can't be adjusted. I had it in my Juwel Trigon and it took about 18 months to get the flow just right. It doesn't like hydrogen peroxide (3% or 6%) sp...

Use ammonia. There's a chart in the Guides/resources to help calculate how much you need depending on the strength.
Use pure ammonia, not any with perfume or surfactants.

Yes, the zoes (shrimplets) don't stay alive long in freshwater.
You'll notice her disappear for a couple of days and when she comes back she'll have moulted and I doubt you'll see the zoes. The male will then be extra attentive and so it goes on.....

Don't over-worry about the ph, just remember that it does change a lot for when you do water changes.
It's the hardness that matters more to the fish.

Whenever I've had the meters or fuse box changed the power has been off for up to 2 hours, I've also forgotten to switch various plugs back on after water changes.
I have 4 tanks, but not had a problem with power outages.

How hard is the water?
It may be that they put CO2 into the supply to keep down the limescale in the pipes....?
