Tannings are fine and are beneficial to fish. Just do your normal 25% weekly water changes and not worry about it too much.

I kind of did too, but the algae on the rocks, the calcium build up that I couldn't remove and the fine gravel full of BBA was the last straw.

Yes keep dosing the ammonia until the day before, big water change to remove any excess nitrates and stock as much as you want (for the tank size/filter ofc!!)
