Too much aloe vera can cause excess slime coat/mucus which can lead to further issues. If I remember correctly that is

He looks good to me. Light/white coloured bettas are known to changing colour more so than the others colours as they mature. It's also possible that he carries something called the "marble" gene. Which isn't anything to really worry about but can explain colour change.
If it's just his colour change that is causing your worry and not actually his behaviour then I would put money on his colour change just a nature change for him

Aloe vera can cause problems with the protective mucus on the fish.

I've been doing this for a couple of months now and it's gently reducing the hardness in the tank. The inmates seem to like it (I even caught a couple of my Harlequins getting jiggy with it the other day) and it's even reduced the scale marks around the waterline.

They've got a unit in the industrial estate behind Castlepoint (at the self storage place next door to Bookers). The unit's like a small shipping container with a screen/card payment machine and hose/nozzle. I just pull up with a container in my boot, self-service some water, pay and go. It's dead easy. On my last visit I got 50 litres for 92p (I'm guessing you wouldn't even need that much).
Fishcove are great - I only discovered him a while ago. Lovely little shop.
